Actually my question is about if Blue Ox makes a baseplate for the 2019 Equinox or if they make an adapter to attach to a Blue Ox tow bar?

Blue Ox does offer a base plate for your 2019 Chevrolet Equinox as does Roadmaster. All base plates appear on the page I linked for you.
Blue Ox part # BX1730 fits the front wheel drive (FWD) 1.5L gas turbo, the 2.0L gas turbo and also the diesel model. It is directly compatible with Blue Ox tow bars like the Aladdin, Alpha, Avail, and Aventa models.
Similarly Roadmaster's base plates are available for the different versions of the car. Blue Ox base plate # BX1730 can be used with Roadmaster tow bars by using adapter kit # RM-031 or # RM-031-5.
