The Surco Spare-Tire-Mounted Cargo Basket - 19" Long x 43" Wide # SPSJ4319 has a 100 lb capacity so it absolutely can carry your 5 gallon can of gas. This carrier however is not intended for off-road use, so if used in that capacity you will be operating outside of the warranty and you will want to make sure the weight is as centered as possible to reduce torque on the shaft and mount.
I recommend using the Erickson Roof-Rack Cargo Net - 36" x 48" # EM01010 for loose items and tie down straps like # 05605 for heavier items like the gas can.
You may want to consider the Rampage Trail Can Holder - Upright Mount - 5 Gallon # RA86625 for your off-road adventures.
