Is the PK11932 the right choice to add a second 7 pole RV connector in the bed of my 2007 F250 SD short box. If not which brand/model do I need

I would recommend you get the Curt Fifth Wheel and Gooseneck Wiring Harness # C56000 as it comes with everything you would need, and would simply just plug inline with the factory 7-way at the rear of your 2007 Ford F250 Super Duty. I attached an installation video for this product for you to check out also.
The Pollak 5th Wheel and Gooseneck Trailer Connector Wiring Harness # PK11932 that you referenced would work but you need to wire up one of the connectors of it and you would need to purchase a Pollak Replacement 7-Pole # PK11893 as well.
