I have a 2005 Toyota Sequoia. I am towing a 19 foot fiberglass bass boat on a tandem axle trailer. I need to know hitch class and what drop will work best.

For your 2005 Toyota Sequoia we have the Curt hitch part # 13440 which is a Class III hitch that would work great for towing a small bass boat. To pick out the correct drop ball mount though will require you to know the coupler height of your trailer. When this hitch is installed it's height will be right at 20-1/2 inches from the ground. So you'll need to measure from the bottom of the coupler lip to the ground when the trailer is level. The difference between that number and 20-1/2 inch will be the drop you need.
Since you wanted to do some towing you might be interested in etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
