Will Installing Trailer Hitch w/High Tongue Weight Capacity Increase Capacity on 2016 Toyota Tacoma

Hitch specs for a 2016 Tacoma with tow package. Am I correct in understanding that if I replace the factory hitch with yours my tongue weight max would become 1050 lbs or 1200 with wdh?

Not exactly. If you were to install the Curt trailer hitch # C13264 on your 2016 Toyota Tacoma the tongue weight capacity of the HITCH would be 900 lbs. But the capacity of the truck would not change. The truck's various capacities are set in stone and cannot be changed.
According to the 2016 Tacoma owner's manual the tongue weight capacity of the truck is up to 11 percent of the gross trailer weight. Depending on the exact configuration of your truck that can be anywhere from 385 pounds up to 748 pounds. Since your Tacoma has the factory tow package the tongue weight capacity will be between 660 pounds to 748 pounds. Take a look at the trailer towing section of your owner's manual to confirm your vehicle capacity.
