Wondering if there were any products available that would allow me to mount my license plate to my hitch mounted bike rack cause the license plate cannot be seen at all

You will need to check with your local DMV to verify any laws, city or county ordinances that specify the visibility of your license plate behind the bike rack.
We don't have any that are directly intended for this application, but some of the more popular ones are the Thule Replacement Licence Plate Bracket, part # 753-2023 and the Optronics License Plate Mount, part # LP10SB.
If you plan on mounting and using either one of these, becuase they are not designed for this use, you'll have to fabricate a way to secure a bracket to your bike and connect the wiring if you use the Thule bracket. You will also want to check with the manufacturer of your bike rack to ensure that you don't void the rack's warranty.
