To monitor your boat trailer while driving, I recommend looking at the Way Wireless Observation System # 324-000002. This is a great, wireless system that uses digital transmission to relay images from the camera. It features a nice full-color 7 inch LED monitor that will secure to your windshield or dash with the included suction cup mount.
In order to use this as an observation system while you are driving you will simply need to wire it to a constant 12 volt power source on the vehicle (such as your running lights).
I have attached a short demonstration video on this product so you can get a better look at its design and features.
