Question:
My OEM receiver has 3 mounting bolts for the frame, but this only has 2. Is there another model I should be looking at?

The Curt Class III hitch part # C13422 that you referenced is a confirmed fit for your 2003 Chevy Suburban. It does have only two bolts on the mount flanges that are on the ends of the hitch tube but the bracket that's above the hitch opening also adds an additional 2 mounting points.
Curt has tested this hitch on your vehicle and found that it fit and worked well when installed using all of the mounting points of the hitch. So as long as you do that you would be totally fine.
