how can you tell the difference between a 2700 pound axle and a 3500 pound axle

Typically the axle diameter is a good way to determine capacity but with the capacities being as close as your they could be the same diameter. A 3,500 lb axle should be 2-3/8 inches in diameter.
You can also check the plate up near the coupler of the trailer that has the VIN. Typically axle capacities are listed there. You may even be able to find a similar rating on the axle itself depending on the brand of it.
Aside from that it would come down to more info on the hubs. With the bearing numbers and bolt pattern I should be able to get you close if you get that info to me.
