Could I get the Huskey gooseneck hitch with a 8 in. Offset instead of a 3 in.?

I can help you find a gooseneck (hitch) option with an offset for your 2012 Chevrolet Silverado.
For your 8 inch offset need, I would recommend the B&W Extend-a-Goose Coupler # BWTEXA4200 in conjunction with the Curt Spider 5th Wheel to Gooseneck Adapter # 16085.
This will give you 10 inches of clearance between your truck cab and trailer. According to my contact the B&W and Curt Spider are compatible because the Spider has a standard 2-5/16 inch ball that the coupler requires.
