Question:
should you grease the shank so it will slide in and out of the receiver smoothly?

You do not want to grease the shanks of ball mounts as the grease ends up attracting dirt which will wear on the hitch and ball mount as the two move around on/in each other.
Your best option is to keep the hitch and ball mount as clean as possible.
