I am considering using a hitch carrier for a ~280lb dirt bike and my 2016 Ford Explorer. Which trailer hitch and carrier do you recommend?

For your 2016 Ford Explorer I recommend Curt trailer hitch # C13386. This is a Class III trailer hitch with a 2 inch receiver rated for 400 pounds tongue weight and 4,000 pounds gross trailer weight. It will work great with a hitch mounted dirt bike carrier. I have linked a video showing an example installation for you.
For a dirt bike carrier I recommend # e98873 because it is light weight at about 58 pounds but is heavy duty enought to be rated up to 500 pounds. The combined weight of this carrier and the 280 pound dirt bike would only be 343 pounds so it is within the capacity of the trailer hitch.
