I looked up the towing capacity of your 2000 Ford Mustang V6 and it appears to have a 1,000 lb towing capacity. So the Curt Trailer Hitch # C11041 could work but you'd need to get your 1,100 lb trailer setup lower by at least 100 lbs to be safe.
For easy to install trailer wiring you'd just need the part # C55326, for a ball mount # 3592, and for hitch balls you'd want # 19258 for a 2 inch ball or part # 19256 for a 1-7/8 inch ball.
