Would the Hollywood over the top rack work best for my car see attached photo? I do not have cross bars or roof rails. Is this a good quality brand and is it available for 2-bikes instead of 3? Would I need an adapter for a bike that does not have a straight-across bar the bar doesnt go all the way down but its at an angle and goes right under the bike seat, not straight across

While the Hollywood Racks Over-The-Top bike rack # HRF2 (for 2 bikes) will likely fit your 2016 Subaru Impreza hatchback, Hollywood Racks does not list it as a fit for the 2016 models yet so I cannot recommend it. But they are good quality bike racks and nothing else is recommended for vehicles that have that spoiler piece at the top of the rear hatch.
What you can do is install a trailer hitch and use a hitch mount bike rack. As long as your Impreza hatchback has single exhaust you can use Draw-Tite hitch # DT24959. This might be more ideal for you because a trunk mount rack will have constant contact with the vehicle and a hitch mount bike rack will not so in terms of protecting the vehicle a hitch and hitch mount rack is the way to go.
For a bike rack you can use the Swagman XC # S64650. Unless you have an extremely low rail compared to a typical men's or women's bicycle, you won't need an adapter, but if there is no rail then an adapter bar like # 64005 is needed to create that top frame rail.
