Question:
If I switch to a 24V battery setup, can I just tap one battery for my 12V lights or do I need a stepdown converter?

Hey Mark, you’ll definitely want the step-down converter.
Tapping a single battery in a 24V bank can cause imbalance and shorten battery life. The right way is to use a DC-to-DC converter like # VN32ZR, which safely steps 24V down to 12V for your lights and accessories. I have to do this same thing on electric golfcarts when I add 12v light kits to a 48v golfcart battery bank.
If you’re running a 24V inverter like Victron 2,400w inverter charger # VN58ZR or 2,400w inverter # VN44RR, pairing it with the # VN32ZR keeps everything working correctly. I'm sure you'd rather be safe than sorry :).
What kind of 12V loads are you planning to run? You may even be able to get by with the lower wattage units if you want to save a bit of money, but the smaller 1,000w units won't be able to run an AC unit or anything like that.
