Yes, you can Craig. You can indeed remove the doors on the Norcold Polar Elite Full RV Refrigerator w/ Freezer item # NC67VR. The Norcold RV Refrigerator item # NC67VR measures 24" without the doors.
I have attached a diagram below with quite a few measurements.
