The Erickson Watersport Carriers part # EM02000 that you referenced is confirmed to work on PWC's that weigh less than 1,000 lbs.
Without knowing what specific model 2005 Yamaha 3-seater it's hard for me to say yes or no. But, if you look up the weight of your PWC or take it to a scale and weigh it and it's less than 1,000 lbs you should be good to go.
