If I switch my boat trailer from a yoke coupler to a flat-lip, will I need a different ICON lock?

Bryan, yes, most likely. ICON locks are not usually one-size-fits-all as they try to make them as custom fit and specific as possible for best fitment and best theft-protection, unlike universal locks that can normally be busted open easier. The # AL33DQ is for yoke-style horseshoe latches, while the # AL26DQ is for flat-lip couplers. 2. Same ball size, but different latch designs. Both have the same anti-grinder fins and disc-detainer keys.
Do you plan on swapping couplers soon, or just curious? If your yoke style has a flat lip on it, it may work with the same ICON lock you have, you'll just need to try before buying the other one. I can't guarantee it'll work since it's not designed that way.
