Hey Jim,
There unfortunately isn't a custom-fit trailer hitch available for your 1990 Volkswagen Cabriolet so you'd have to get in touch with a local fabricator shop and have them build you one using a receiver tube like the # 337RT255808. They'll need to determine the drop needed from the frame to clear the rear fascia and the build the crosstube to fit around the exhaust and any other components under the vehicle.
The # 337RT255808 is just an example, if you need a different length receiver tube just let me know and I can look through the sizes we have to find the best fit. If you're planning on hauling accessories with this hitch you'll definitely want a 2" receiver since it's the most common sizing for accessories and you can always use a reducer like the # e63YR to haul any smaller 1-1/4" accessories.
