Hey Mike, yes you can - depending on the combined weight of your bikes. We do have universal hitches like the Adjustable Width Trailer Hitch Receiver for RVs # 13703 which will fit frames ranging from 22" to 72" wide, and has a max weight capacity of 3,500 lbs.
So, in theory, as long as the combined weight of your bikes weigh less than 330 lbs, you could use this rack and hitch and be fine.

Hey Mike, how did things turn out with the hitch setup on your Jayco popup for the e-bikes? It’d be great to hear if the adjustable hitch handled the weight the way you needed. Your update could make it easier for others looking to carry e-bikes on similar campers.
