Hey Mike,
The RockyMounts VanTrack for Fork Mount Bike Racks # RKY56FR is designed to be mounted to the floor so it hasn't been tested to work vertically, although one customer has tried this and even sent us in a pic with their review. Essentially, you can do it but you'd be voiding the manufacturer warranty.
SeaSucker offers the Hornet Rear Window Bike Rack for 1 Bike # 298-BH1302, which was designed specifically to mount bikes vertically. You'll just need a window on the back of the camper to mount the vacuum cups to.
