I have a 2011 gmc Sierra 3500 with an 8ft bed. Would a torklift super hitch interfere with the spare tire ?

The TorkLift SuperHitch # TLC1208 and SuperHitch Magnum # TLC1208-30 designed for your 2011 Sierra 3500 will not interfere with the spare tire. The spare will have to be lowered or removed for installation but you can reinstall it once the hitch installation is complete.
