Are there side plates available for the Demco 13K hitch to be mounted into a 2023 3500 Silverado with puck system? Or is # DM6333 my only choice?

No, there's not. The Replacement Side Plates item # DM49GV that mount in the GM puck system are listed as only fitting the 18k and 21k Demco Autoslider hitches. To mount the 13k Demco Autoslide item # DM8550040 in your 2023 Chevy Silverado 3500's puck system you will need to use the Demco 5th Wheel Rail Adapter item # DM6333 you mentioned.
