We were hoping to use this hitch for a small bike carrier. The bike carrier is for a 2” receiver, will the 1 1/4 to 2” adapter work? We will never tow with this vehicle.

Since the Draw-Tite Sportframe Trailer Hitch Receiver 24659 you got for your 2002 Pontiac Grand Prix is a Class I hitch I don't recommend using an adapter like the Brophy # HT5R because it reduces the weight rating of your hitch receiver by 50% and it causes more movement while going down the road.
The Draw-Tite hitch you purchased has a tongue weight rating of 200 lbs so by using this adapter you have 100 lbs to work with, both for the rack and your bike.
Technically you can do this if both the bike rack and bike weigh under 100 lbs combined, but Class I hitches are already pretty weak on their own so it isn't advised.
For an alternative I recommend checking out the Hollywood Racks Destination Bike Rack # HLY94FR because it is a lightweight platform rack compatible both with 1-1/4" and 2" hitch receivers.
