Will a 2005 2nd Gen hitch fit my 2007 3rd gen CRV?

You will need a new etrailer Trailer Hitch Receiver # e39AR for your 2007 Honda CR-V. The design of the receiver has changed from the Receiver # e69AR which fits your 2005 CR-V.
You will also need a new T-One Vehicle Wiring Harness # 118427 as the factory side connector this connects to has also changed.
