I see your recommendations for the trailer hitch, the ball, and the wiring harness. What ball mount do you recommend? I would like to do all the shopping at once.

As you are looking at the Curt Trailer Hitch Receiver # C11474 and T-One Vehicle Wiring Harness # 118667 for your 2006 Volkswagen Jetta TDI Sedan, Curt recommends the Ball Mount # 3593. This ball mount will accept either a 1-7/8" Ball # 19256 or 2" Ball # 19258 to match your trailer coupler.
I recommend a Ball Mount Bag # ETBMB to store the ball mount, pin and clip when not in use. This will help keep everything together when you need it.
