Do the lines running from the camera to the monitor need to be installed away from other electronic devises and wires to avoid video interference?

No, the wires running from the camera to the monitor on the Rear View Safety Backup Camera System with Trailer Tow Quick Connect Kit # RVS-770614-213 should be fine to be installed near electronic devices.
For best practice, low voltage (telephone, network, PA, CATV, CCTV, etc.) should be run in separate conduits to minimize interference between the high voltage and low voltage circuits. Since RV's don't use high voltage, you should be fine.
