Do The Different Hitch Ball Sizes Have Different Heights As Well?

are the dimensions of a hitch ball from the bottom of the flange to the top of the ball standard. it looks like it might be 2 3/4inch for a standard 2inch ball. is it the same for a 2 5/16inch ball?

From the bottom of the flange to the very top of the ball will indeed be 2-3/4". This can vary slightly between manufacturers and ball size though, but the typical 1-7/8" ball ( # 19256) will measure +/- 2-5/8" tall, the typical 2" ball ( # 63845) will measure +/- 2-3/4" tall, and the typical 2-5/16" ball ( # C40030) will measure +/- 3-1/8" tall.
With that said, you should not be relying on the height of the ball to figure out how much rise or drop you need. This should be done by measuring from the inside top of the receiver hitch on your vehicle and from the ground to the bottom of the coupler on the trailer when on level ground. The coupler for the specific ball size takes this into account and is why you measure to the bottom of it and not the top. The ball mount platform that the flange on the bottom of the ball will sit on will match the bottom of the coupler (basically).
