I would like to install a bathroom vent in my 2017 Jayco Hummingbird. What options are available?

You could use the MaxxAir Mini Deluxe Trailer Roof Vent w/ 12V Fan # MA00-03851 as a bathroom fan. It's an exhaust fan that would do an excellent job in this application.
If you'd rather use the larger in size MaxxFan Deluxe Roof Vent w/ 12V Fan # MA00-05301K you certainly could as well. The fan moves quite a bit more air and is reversible too which you might find helpful.
