My next question is can I use and adapter on the Curt hitch to make it like a 2inch hitch or 1.5 . The bike shop is recommending a 2inch hitch. Thanks so much!

In order to carry electric bikes on a 2021 Hyundai Ioniq you'll need the Curt Trailer Hitch Receiver part # C11486 and Thule EasyFold XT Bike Rack part # TH903202.Typically, you need a larger vehicle to carry electric bikes. That said, this can still be done on a 2021 Hyundai Ioniq but you don't really have many options and due to the rack's design and compatibility, they are not cost effective. The Easy Fold is one of the very few bike racks which can be used with e-bikes and is class I hitch compatible.

No, the 1-1/4" to 2" hitch adapters cut capacity in half and you only have 200 lbs to work with to begin so that won't work for e-bikes. As stated, you don't have many bike racks to choose from at all due to the hitch size limitations of the vehicle and the e-bike rated requirement. The Thule Easy Fold is the best option whether you can buy now or have to save up until you get the right rack.
