I bought a EcoHitch Stealth Trailer Hitch Receiver - Custom Fit - 2inch 306-X7375 for my 2018 VW GTI. Installed, the inner top of the receiver tube has a height of 13 inches. The coupler height of uhal trailer is 18 - 18.5 according to their website. So do I need 5 inches to 5.5 of rise? Do I need to consider the height of the ball as well? Would someone be able to recommend both ball mount and mount combo that can satisfy my use case?

I would be glad to make a recommendation and help you set up a ball mount for your 2018 Volkswagen Golf. I recommend the Curt Ball Mount for 2" Hitches - 5" Rise, 6" Drop - 8,000 lbs - Aluminum item # C24WR. You will also need a hitch ball the Curt 2" Hitch Ball item # A-82 is 2 3/4" tall. This ball and ball mount fits your EcoHitch item # 306-X7375 2" hitch receiver and has a 5" rise.
I recommend the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector Item # C56405. This will allow you to control your trailers lighting functions and plugs directly in behind the rear tail lights.
