Looking for advice on the best air bags for a 2014 F250 crew cab short box with a BandW turnover goose neck ball. I’m thinking about the 7500lbs vs 5000lbs as I haul a 5th wheel. Would appreciate your advice

Your best helper spring option will depend on what all you use your truck for.
If the primary use is towing a 5th wheel, I'd honestly go with something like the SumoSprings # SSR-139-40-2 for 4WD trucks or # SS29MR for 2WD trucks. The SumoSprings product offers 3000 lbs of additional support and is ideal for gooseneck or 5th wheel towing situations where the weight applied to the rear suspension doesn't vary much. The SumoSprings won't affect your ride quality until a load applied to the rear suspension compresses it which is when the SumoSprings come into play. There's no maintenance needed and they won't ever leak.
Air Helper Springs like the Firestone # F2597 do have their place though. If you tow one week and haul various loads in the truck bed the following week, you'll need the adjustability that an air helper system would provide. You'll be able to tailor the suspension to the load which can come in really handy. The Firestone # F2597 is compatible with your B&W # BWGNRM1111 Turnover Ball Hitch.
If you decide on the Firestone # F2597 Ride-Rite system, you might also be interested in an on-board compressor system like a single path system such as # F2097 that fills/deflates both bags at the same time or # F2219 which allows you to control each bag individually which helps compensate for uneven loads.
