Not sure what part numbers I need to get for my trailer or if I need 2 or all 4 wheels and what size/weight stopping power. Can you reccomend?

I would be happy to help you identify the correct replacement brake assemblies for your 2000 Jayco Eagle 14SO, but unfortunately we do not have a break down of the specific components your trailer uses.
What you will need to do is remove one of the hub and drum assemblies from your trailer and measure the inside diameter of the drum, and the inside depth of the drum as shown in the included diagram.
For example if your drum measures 10" x 2-1/4" then the Dexter Nev-R-Adjust Electric Trailer Brake Kit - 10" - Left and Right Hand Assemblies - 3.5K # 23-468-469 would be the correct replacements for you.
If you find your drum is a different size just let me know.
