Question:
Preface: Im not a car guy. Wondering how difficult for someone, who has little to no experience working with cars, it is to install the Curt C56233 into my vehicle. Also want to double check this is the correct item for my make, model, and trim. Thank you for any info!

The Curt # C56233 T-Connector you'd asked about is indeed a fit for your 2017 Hyundai Ioniq Hybrid Blue model. The installation is pretty straightforward.
The converter box plugs inline at the connection points between the driver's and passenger taillight wiring harness and the taillight assemblies, and one ground wire needs to be connected to the vehicle body.
You'll also need to run one wire through an existing grommet (usually found under the spare tire) under the vehicle to the positive battery terminal. You'll just need to use a utility knife to cut a slit in the grommet so you can slip the wire through to the underside of the vehicle. Be sure to use some silicone to seal up the point where the wire runs through the grommet to keep exhaust gasses from entering the passenger compartment.
I don't have specific advice on exactly how to route the wire under the vehicle, but it's best to locate an existing wire harness and zip tie the wire to it. Be sure to avoid anything that gets hot or moves, like exhaust, steering and suspension components.
All told, the installation isn't difficult, but running the wire to be battery will be the most time-consuming part of the install.
I'll link you to the installation instructions and to a help article that provides some advice on routing the wire up to the battery.
