I am looking for any ball hitch. But one needs to be 2 5/16 inche size with a shank width of 1 1/4 inches and a shank length of 3 inches. And I need the same hitch in 1 7/8 inch. I have been looking for a while and haven’t seen any with a long shank like I’m describing.

It sounds like you are looking for a hitch ball with a long shank.
We have the exact 2-5/16" hitch ball you are looking for which is the 2-5/16" Hitch Ball w/ 1" Rise - 1-1/4" Diameter x 3-1/4" Long Shank - Raw - 24K # BWHB94003 which has a 1-/4" diameter shank and a 3-1/4" long shank.
While we do have a 1-7/8" hitch ball that has a 1-1/4" shank, the # C48810, it only has a shank that is 2-3/8" long.
Your best bet would be to purchase a separate ball mount with a 1" diameter ball mount hole and using the 1-7/8" Hitch Ball - 1" Diameter x 3" Long Shank - Chrome - 3,500 lbs # C40017 which has a 3" long shank.
