How do I know what style / model cover I have? I bought my truck with this cover on it.

I reached out to my contact at TruXedo and from your description and pictures they were able to identify your model as the LO PRO. Also, she knows that the 2005 F250 has a slightly longer bed than most, and as such you will need the the TruXedo # TX1115173 kit for 8' beds.
Also, your pictures revealed that your track was riding low and needed to be adjusted upwards. Rails riding too low can cause several issues including too low of tension on the cover, the cover can come off while driving, and premature wear from being too loose.
