Your Draw-Tite # 5100 would connect to the tow package wiring of your Avalanche as follows:
controller red wire to light blue tow package wire
controller black wire to red and black tow package wire
controller dark blue wire to dark blue tow package wire
controller white wire to white tow package wire
The tow package also might have an additional orange wire that is not needed and should be bundled up out of the way. Cover the end of the wire with electrical tape so that it will not contact any metal object under the dash and short out.
There might also be some wiring that needs to be completed under the hood. If you click on the FAQ article I have linked to, you can see the entire procedure for installing a brake controller on your Avalanche.
