2020 Chevrolet Traverse AWD Premier Coupler height on my trailer is 17-1/8”. Hitch height: 22” with no load 19-1/2” with tongue weight of trailer added 18-1/2” with camping load and trailer I often take day trips with just the boat. 3 or 4 times a year we go camping with the boat. Would you recommend an adjustable mount or one for just the boat and another for camping with the boat?

I recommend going with an adjustable ball mount like the Rapid Hitch Adjustable Aluminum Ball Mount Kit - 2 Zinc Balls - 5-1/2" Drop, 6-1/2" Rise # AM3411 you were looking at. An adjustable hitch provides you with the flexibility to handle trailers that might be different heights while always keeping your trailer level, while not having to swap out ball mounts depending on how your vehicle is loaded. The Rapid Hitch adjusts in 1" increments, so you should be covered no matter what setting you need.
The AM3411 comes with a 1-7/8" and 2" hitch ball, but if you need 2" and 2-5/16" you can use the # AM3410.
