For your 2019 Subaru Outback I recommend using the etrailer # e98847 because of the heavy duty powder coating that is applied, which will help fight off rust. This is a hitch with a 2" receiver, so it will give you a wide variety of bike racks that can be used and it's custom fit so there is no drilling required for installation.

For your 2019 Honda Odyssey you can use the etrailer # e98855 which is also going to have a durable powder coat and a no drill installation. This also has the 2" receiver so you'll be able to use the same bike rack on both vehicles without issues.

If you're also looking for a bike rack that will be compatible with both of these vehicles, I recommend using the Hollywood Racks Destination 4 Bike Platform Rack - 2" Hitches - Frame Mount # HR4000 because the platform style makes for easy loading and unloading of the bikes.
