Question:
It appears that I can only add a 1.25 hitch to my 2015 Buick Encore. As such, I believe the Swagman tray bike racks require a bolt and nut to attach to the hitch. With a 2 inch hitch, I have been able to use a 1.25 to 2 inch adapter, bolted to my tray rack, so I dont have to use a wrench every time a remove/replace my rack. Can you identify 1.25 inch tray racks that doesn't need a wrench to install? Or is there a 2 inch hitch solution for my Encore?

You are correct that the only size trailer hitch receiver that fits your 2015 Buick Encore is 1-1/4 inches. In fact, we only have one hitch available for your 2015 Buick Encore is the Curt # C11527. This is a Class I hitch which will limit you to Class I compatible bike racks.
For a rack, I recommend the Kuat Sherpa 2.0 Bike Rack for 2 Bikes - 1-1/4" Hitches - Wheel Mount - Pearl
Item # SH12P. It has an easy tool-free installation and many other great features that you can see on the attached video. It is compatible with your class 1 hitch and works with your 1-1/4 receiver as well.
