Looking for best adjustable solution for this truck, I tow multiple trailers and probably need up to 8inch of drop.

The B and W Tow and Stow adjustable ball mounts like the part # BWTS10050B are a really great choice. This ball mount gives you all three popular ball sizes and gives a drop of up to 9 inches so you'd have basically any trailer covered. These also have a patented design for storing the balls on the other side of the shank so you won't bust your shins! This fits a 2 inch hitch.
For a version that fits a 2-1/2 inch hitch we have the part # BW54FR as well.
