The Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" part # 13084 is a fit for all models of the 2000 Jeep Cherokee however XJ is not a model. XJ is what the second generation (1983-2001) of Jeep Cherokees are called so the hitch will fit your 2000 Jeep Cherokee however it will require drilling through the frame mounted, closed sided steel skid shield if the Jeep has one which is why I recommend the Curt Trailer Hitch Receiver part # 13160 because it does not require drilling at all and has the same 5,000 lb weight capacity rating. The only difference is that the Curt is a round tube design, I have attached an installation video of both hitches for your reference.
If you need wiring, I recommend the Tekonsha T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118354 because the Tekonsha brand wiring has proven to be more reliable compared to other options especially the converter boxes. There is an installation video attached of the wiring for you to take a look at.
If you plan on towing I recommend an adjustable ball mount for convenience. Depending on how much rise or drop you need to tow the trailer level, I recommend the MaxxTow Adjustable-Height Ball Mount part # MT70068 which provides up to 7-1/2" of Drop or 6-1/4" of Rise. Please see the attached article about how to figure the amount of rise or drop you may need. For a 2" ball you can use part # 40038 or part # 63847 for a 2-5/16" ball.
