I currently have a Demco 6141 on a 2013 Ram 1500. I am looking at buying a 2019 Ram 2500. Would I be able to use the Demco 6141?

Fifth wheel hitches aren't vehicle specific but the mounting kits used to attach the hitch to the truck are. To install your existing hitch on your 2019 Ram 2500, you'll need the Demco install Rail/Bracket kit, part # DM8552025-71. You can see an installation video by clicking the provided link.
To install a 7-way trailer connector in the bed of your truck, you'd need a # DM8555002 wiring harness.
