Will these fit a 2017 Ram 1500 Crew Cab? Also if you pull an 8x26foot camper will they be sufficient enough to see the rear of the camper?

Yes, the CIPA Custom Towing Mirrors # CM11400 are a confirmed fit for all models of the 2017 Ram 1500 which includes your crew cab. These will do an excellent job allowing you to see behind your camper that is 8 feet wide as well. I attached a review video for the mirrors on a similar Ram truck as well as a picture of what they look like installed as well.
