The install time/cost for installing a hitch on a 2013 Ford Escape depends on which hitch you end up going with. For example the concealed crosstube hitch # e98866 is listed as taking about 1.5 hours for an average Joe to install and about half that for a mechanic. The more visible # 75758 would probably only take about 1/2 an hour for a mechanic. Some shops will have a minimum 1 shop hour rate for all jobs so what you'd want to do is call around and ask what the shop rate is and use that info to determine roughly the cost. They might have a quote they can give you as well. I'd find a local shop to you with a solid reputation and have them do the install.
The # e98866 is what I would recommend though as it looks the best being mostly concealed and has the best ground clearance. See attached picture.
