There are a few different 2 inch trailer hitches for a 2019 Mazda CX-5 but I cannot really tell the difference, can you compare the options for me so I have a better idea of what they are?

That's a good question because the differences can certainly be subtle. The 2" trailer hitches that fit your 2019 Mazda CX-5 are the Draw-Tite Trailer Hitch Receiver # 76138, etrailer.com Trailer Hitch Receiver # e98902, and Curt Trailer Hitch Receiver # C13315.
The most significant difference between the three hitches is going to be ground clearance, as both the Curt and etrailer hitches will measure about 13-1/4" from the ground while the Draw-Tite is about 12-1/2". And while this may not seem like much, the extra ground clearance can be important so the hitch and accessories don't potentially hit the ground if you have a steep driveway or go over a large bump, for example.
Apart from that, the most noticeable difference is that the Draw-Tite has slightly higher capacities compared to the etrailer and Curt (4,500 lbs towing and 675 lbs tongue weight compared to 4,000 lbs towing and 600 lbs tongue weight), but the CX-5 has a maximum towing capacity of 2,000 lbs, which all of these hitches are well over-rated for (which is common for trailer hitches) so all three have plenty of capacity.
The hitch I recommend for your 2019 Mazda CX-5, because of the ground clearance, is either the Curt # C13315 or the etrailer # e98902. The only difference between these two hitches is actually the finish, with the etrailer having a Matte Black powder coat and the Curt a Gloss Black powder coat.
