As of this writing (10-2019) there is not yet a brake controller plug-in adapter available that allows for a plug-and-play installation on your 2020 Jeep Gladiator. With that being said, there are still a couple of ways you can install a brake controller (depending on the model controller) even if you aren't showing power on the brake light switch wire with the brake pedal depressed.
First, to install a traditional brake controller like the excellent Curt Spectrum # C51170 you were looking at, you can use the Stop Light Switch Kit # RM-751497. This will provide the needed power when applying the brakes. You would just run the red wire from the Spectrum brake controller to this kit.
Another option is forgetting about the stop light switch altogether and going with the Curt Echo Brake Controller # C51180 instead. Assuming your Gladiator has the factory 7-Way connector at the rear, this particular brake controller won't require any additional wiring or components. It actually plugs right into the 7-Way itself and pairs to your smart phone via Bluetooth. And that's it.
The controller automatically sends power back to the trailer brakes in proportion to your deceleration (the harder you brake the more power it sends). You can adjust settings or activate the manual override right on your phone.
I have attached a short video demonstration that you can check out as well.
