What is the difference between a standard hitch for my 2011 Toyota Venza and a hidden hitch? What part is hidden?

Hidden Hitch (which is the same model as the Draw-Tite) is a brand name, and will not necessarily describe how visible the hitch is. If you look at the hitches available for your 2011 Toyota, you will see that they are all similarly designed and would install under the vehicle in the same manner. Neither of them would be more or less visible.
I have provided a photo of the Curt Class III hitch, part # 13356 which would be pretty representative of how the available hitches would appear from the rear.
The appearance, installation procedure, and weight capacities of both 3 Class III receivers are extremely similar. In this instance, you could choose the less expensive Curt # 13356 without feeling that you sacrificed anything.
If you were planning on using the hitch to tow a trailer, you might also need the following:
Ball mount, part # D-4
Wiring harness with trailer connector, part # 118482
1-7/8 inch trailer ball, part # 19260
2 inch trailer ball, part # 63845
Pin and clip, part # PC3
Locking stainless steel hitch pin, part # e98882
