The brackets part # LC373965 that you referenced basically either bolt around or weld to the bumper support beam on the RV. I attached a picture that shows them welded but you could also drill holes in the bumper and use included hardware to secure the brackets. Most likely yes this would fit your 2020 Rockwood 2506S Mini Lite.
The kit this fits is the Lippert Components Tailgate Storage System # LC243621 which is designed to attach to a 2x4 steel bumper extension that goes in between the i-beam frame on your trailer and the 4x4 steel bumper. There also needs to be at least 4" of space on the 2x4 steel bumper extension between the trailer and bumper in order for this to work.
