Could I and/or should I consider this part to transport one kayak AND one paddleboard at the same time?

The Thule Compass Kayak and SUP Carrier # TH890000 that you referenced can't carry a kayak and a SUP at the same time. It can do two of either but can't mix the two. You'd need to do a kayak carrier like the # TH834 and a SUP carrier like # TH8100001.
